Winemakers Notes

Colour: Crimson with purple edges.
Bouquet: Crushed dark mulberry and blueberry with lashings of anise, musk and pepper.
Palate: Intricate and impressive palate of fresh blackberry fruits, rounded and textured, supported by long, fine dusty tannin and underlying spice.
Cellaring Potential: Will benefit from 5-8 years careful cellaring.
Vinification: Vintage 2007 was exceptionally warm and dry. Grapes were
harvested up to 4 weeks earlier than normal and yields were far lower than expected. The fruit was crushed to static fermenters and fermented at moderate temperatures for 8 days prior to pressing and draining to French oak for maturation.
Winemakers Comments: We are really excited about the quality of the 2007 Estate Shiraz. The wine is dark and brooding yet interesting and complex and over time will flesh out to show more of its intense fruit varietals.
Serving Suggestions: Serve at room temp- 15-18 C
Enjoy with full-flavoured cheese and quince paste.
