Bouquet: Aromas of mulberry and blackberry with hints of blackcurrant and bay leaf.
Palate: Dark plum fruits and mouth-filling blackberries complement a supple and flavoursome palate, supported by fine, lingering French oak tannins.
Cellaring Potential: Will benefit from 5-8 years careful cellaring.
Vinification: Warm and compressed, the 2007 vintage was the antithesis of the
cold 2006 season. The warmth allowed firm ripe flavours, making rich
red wines of opulence. Cabernet Sauvignon was harvested in the cool
of the night and allowed to macerate prior to fermentation. Maturation
was for 12 months in one year old and seasoned French oak prior to
bottling. The Merlot is blended to the Cabernet to give more presence
on the front palate of blackberry and fleshy fruits.
Winemakers Comments: The Ferngrove Symbols style is about varietal character and the unqiueness of the Frankland River wine region whilst giving consumers excellent value.
Serving Suggestions: Serve at room temp- 15-18 C
Enjoy with a juicy barbequed steak and roasted vegetables.
